Quick and Easy Banana Muffins

Since relaunching this blog, and wanting to have this space as a representation of where I am now and what I like to read, one of the things I've really been looking to post about is baking and cooking. I really enjoy spending time in the kitchen and since I now live with my always hungry carpenter boyfriend, I have even more excuse to get creative in the kitchen. So this is my first recipe post and my kitchen in our rented flat is far less than photogenic so bare with me! I've kept it simple this time with a recipe my boyfriend loves, banana muffins!














This recipe is so quick and easy and is perfect for making use of over-ripe bananas as I really hate wasting food!

Ingredients
265g self raising flour
40g plain flour
3 teaspoons ground cinnamon
120g brown sugar
4 tablespoons honey
125ml milk
2 eggs, whisked
50g butter, melted
2 ripe bananas, mashed

1. Preheat the oven to 180°C and place muffin cases in a muffin tray.
2. Sift the flours and cinnamon into a large bowl and stir in the brown sugar.

3. Place the milk, eggs, butter, banana and honey into a separate bowl and mix.
4. Add the banana mixture into the flour and sugar and stir until fully combined.

5. Spoon the mixture into the cases and bake for 15-20 minutes until golden brown. Leave on a wire rack to cool (or eat them hot straight out of the oven - I can never resist!)



























You really can't go wrong with these muffins, they're an easy work night bake and are great for breakfast or as a desert warmed with strawberries. I am working on a wheat-free version so once I have a recipe perfected I will be sure to post it!
